We tried Simply Nic's shortbread for the first time a year ago, and have been addicted ever since. They are all hand-made, and have really good combinations of spices and flavors (a lot of locallly grown ingredients). My wife's favorites are the Rosmary and Espresso Cocoa nib and I need to have a stash of the cardamon-ginger close at all times or I start getting the shakes. They're great as thank-you presents, and we send gift baskets of them to all our friends. Try one and you'll need many more....
